This week’s motherhood article brings an exciting collaboration between Calle Pata Salada and A La Madre on the topic of kid-friendly food! If you’re not already familiar with A La Madre and what they do, here’s a little bit about them.. 

A La Madre is an online platform where three moms from three different parts of the world, with different upbringings and views come together to share their experiences and document their motherhood journey. The A La Madre founders, Tania, Anai, and Sofia, wanted to create a safe space where parents in Mexico and worldwide could unite and discuss parenting topics, from the wonderful to the gruesome, and be free of any judgement and labels.  

As well as posting useful and relatable content on Instagram, sharing videos, sharing tips, true stories, kid-friendly activities, and food recipes, A La Madre also has a growing YouTube channel in which you’ll find entertaining podcasts discussing all things parenthood. 

A La Madre wants moms and dads to turn to them to feel identified, find moral support and even comic relief due to their brutally honest, fun and crude approach towards parenthood! 

Kid-friendly meals

As parents, we know how important it is to provide our kids with a healthy and balanced diet from a young age - but we also know that sometimes it’s impossible to cook a healthy meal due to lack of time, work overload, or the fact you forgot to stop at the grocery store on the way home and you’re left wondering “what can I make with two eggs, an onion and a cucumber?”. We also know that sometimes you run out of meal ideas and are looking for new recipes and inspiration to keep your little ones happy and healthy. 

We teamed up with A La Madre to provide you with some of their top, kid-friendly meal and snack ideas, which are all healthy, easy to make and delicious! They don’t require much preparation and can be made in bulk, which is perfect for the busy parent!

Oat Cookies

Kids love oat cookies and they are a healthy and filling alternative to regular cookies. They can be enjoyed as either a snack, as a dessert, or for breakfast accompanied with some Greek yoghurt! 

Ingredients: 

  1. 3 cups of oats

  2. 3 bananas

  3. 3 spoonfuls of natural peanut butter

Steps:

  1. Preheat oven to 180 degrees (350 F)

  2. Put all of the ingredients into a food blender and blend at a medium speed until they reach a soft consistency and are well mixed together 

  3. With a tablespoon spoon, begin scooping out the mixture and place on a greased baking tray in circular shapes similar to that of a cookie 

  4. Bake for 12-minutes 

Fish Fingers

Fish fingers are a classic meal idea and have been enjoyed by families for many years. As well as being tasty and healthy, they are a great source of protein and are usually served with vegetables or pasta!

Ingredients needed:

  1. Fish (cod, hake, whitefish, and haddock are the most commonly used fish types)

  2. 3 Eggs

  3. 5- 10 tablespoons of Almond flour

  4. A pinch of salt

  5. A pinch of pepper 

  6. 1 tablespoon of crushed cilantro 

  7. Oil

Steps:

  1. Cut the fish into rectangular shapes

  2. Grab a bowl and fork and whip the 3 eggs until they’re mixed well 

  3. Dip the fish into the whipped eggs, ensuring that every part is covered 

  4. In a separate bowl, mix together the almond flour, salt, pepper, and crushed cilantro

  5. Place the fish into the flour mixture, ensuring that every part of the fish is covered and has a thick layer of flour 

  6. Begin heating the pan and oil to a medium temperature 

  7. Start frying the fish fingers until they have become golden and reached a firm texture 

  8. Once cooked, place on a cooling rack! Enjoy! 

Rice and Spinach Tortita 

A tortita is a traditional Mexican food and the concept of it is similar to that of a tortilla, yet a tortita has a thicker consistency, can contain more ingredients, and can be enjoyed by itself without being accompanied by meat or vegetables. Tortita’s are great as snacks or can be enjoyed as part of a meal!  

Ingredients:

  1. 1 ½ cup of Basmati rice 

  2. 2 eggs 

  3. 1 cup of spinach 

  4. Oil (preferably avocado oil)

  5. Salt and pepper (optional)

Steps:

  1. Boil the Basmati rice  

  2. Chop and marinate the spinach with oil, salt and pepper

  3. Beat the 2 eggs until they are well-mixed 

  4. Add the chopped spinach and Basmati rice to the eggs and mix together well

  5. Heat the pan and oil to a medium temperature 

  6. Using your hands, create circular shapes with the mixture before frying

  7. Fry until cooked well

Banana and spinach hotcakes

These delicious hotcakes are healthy, easy-to-make and can be enjoyed by the whole family for breakfast! They are also great as a snack and can be served with fruit, honey, maple syrup or peanut butter!

Ingredients: 

  1. 1 banana 

  2. 2 eggs

  3. 1 cup of almond flour

  4. ½ a cup of spinach and water 

  5.  ½ a teaspoon of baking powder 

  6. Chocolate chips (optional)

Steps:

  1. Place the spinach and ½ cup of water into the blender (or blend using a fork) and mix until the spinach has reached a watery consistency

  2. Tip the spinach into a large bowl and add the almond flour, 2 eggs, banana and baking powder

  3. Mix the ingredients together

  4. Heat oil and pain to a high temperature

  5. With a spoon, begin putting the mixture into the pan creating miniature pancakes 

  6. Cook until golden

Voila! 

Calle Pata Salada’s favorite kid-friendly recipe!

Pitta Pocket

We are loving this low-fat, healthy snack with chicken, tomatoes and cucumber! It only takes minutes to prepare and kids love it’s versatility.

Ingredients: 

  1. ½ wholemeal pitta bread

  2. 25g cooked skinless chicken breast

  3. ½ cucumber cut into thin strips 

  4. 5 cherry tomatoes, cut into halves 

  5. One pinch of salt

  6. One pinch of Pepper

  7. 1 tablespoon of mayonnaise (optional)

Steps:

  1. Begin by slicing the chick breast into thin strips

  2. Heat a pan at a medium temperature

  3. Cook chicken until it's golden

  4. With either a microwave, oven or a clean pan (without oil) heat the pitta bread until it’s soft and warm

  5. Smear the mayonnaise inside of the pitta bread and sprinkle salt and pepper on it

  6. Place cooked chicken inside pitta bread

  7. Add the cherry tomatoes and cucumber

  8. Your meal is ready to enjoy!
